Fancy something sweet with your afternoon coffee? Here’s a video and an easy recipe for 12 delicious muffins, homemade for the readers of Cosy Coffee Shops.
Total preparation and cooking time: around 45 minutes.
You will need:
- 280g plain flour (or 255g for chocolate muffins, plus cocoa powder)
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 110-140g caster sugar
- 1 egg
- 240ml milk
- 90ml vegetable oil or 90g melted unsalted butter (it must be unsalted unless you want salty muffins)
- Muffin tray
- 12 muffin cases
And also the filling…
150g any fruit, fresh or frozen (if frozen, do not thaw), or 150g chocolate chips + 4 tablespoons cocoa powder.
Maybe apples plus a few teaspoons of cinnamon?
How about blueberries and an apple (as seen in the video)?
Or frozen berries?
Mix the dry stuff.
In another bowl, beat the egg (all of it) and stir in the rest of the wet stuff.
Combine the wet and the dry stuff, but only just (until you can’t see the flour). The mixture should be lumpy. Gently fold in the fruit or choc chips, etc.
Add evenly to muffin cases.
Bake for 20-25 mins.
Test with a sharp knife – if it comes out clean, the muffins are done. It might not come out clean if you hit a lovely juicy berry… that doesn’t count.
The muffins are best eaten when still warm, definitely within a day.
